The Beluga sturgeon (Huso huso) is the largest freshwater fish in the world, growing up to five meters long and weighing up to 1000kg. It can take up to 20 years to mature, and only produces a small amount of caviar per fish, making it one of the most sought-after and exclusive types of caviar.
